I first set foot on American soil in the mid-80s.
My jaws dropped in astonishment. I couldn’t believe my eyes, as we drove out of Los Angeles airport.
There were dozens upon dozens of fastfood restaurants that we passed by, and my mouth was watering, even as my brain was confused with all the choices.
You see, when I was growing up in my native city, with a population of close to 10 million, I could count with one hand the number of US food franchises we had: 1 McDonald’s, 1 Shakey’s Pizza, 1 Kentucky Fried Chicken, and I think maybe an International House of Pancakes (IHOP).
I grew up in a third world developing country, and “delicious and nutritious” food was a scarcity – or so I thought.
My mother would buy a live chicken on Saturday morning, and we’d share that one whole chicken for a family of 5 – and we were blessed, relative to most of our neighbors.
In comparison, we would look at pictures of LARGE American chickens that were easily 2-3 times bigger.
Although I was from a middle class family, opening a can of Spam was reserved for special occasions like birthdays and Christmas dinners. Apples, oranges and especially grapes were so expensive, that only the rich families could afford them. USDA prime rib was out of the question.
I Felt Deprived
Don’t get me wrong, my parents provided well for all our needs, and we never went hungry. However, I just couldn’t help it, especially when I saw “stateside” food products, and compare that to what we eat on a daily basis. In short, my sisters and I felt “deprived”.
One day, I was cooking Spam for breakfast, and my roommate said: “Someday, when you’re earning enough money, you wouldn’t be eating that stuff.”
I didn’t quite understand what he meant, and I wasn’t sure if I should have been offended, but . . .
Within 5 months in the US, I gained 30 lbs, after feasting in the US lifestyle. Back then I thought that was good. I was naive. I didn’t realize, how lucky I was with the “deprivation”.
It has been a long journey for me for the past 20+ years. As I dug deeper into the “conventional wisdom”, I discovered a different world.
Health started as a trivial pursuit, then it turned into a strong curiosity, and eventually a passionate calling.
